Characteristics of Insígnia Gran Reserva

Insígnia Gran Reserva is a cava brut gran reserva from the D.O Cava produced by the winery Canals & Munné. This cava is a blend of 3 grape varieties: Xarel.lo (50%), Macabeo (30%), Parellada (20%).

The D.O Cava is renowned for the excellent brands produced within their borders. The local climate is temperate and mild, ideal for growing grapes. The proximity of the Mediterranean Sea is in this sense also a great help.

The grapes used for Insígnia Gran Reserva come from a selection various vineyards situated in the denomination of origen (D.O Cava). This cava is produced in a conventional manner.

Before being placed on the market, Insígnia Gran Reserva ages for a minimum of 35 months in the bottle. The disgorging process is also carried out using the traditional method.

Canals & Munné is one of the small family run wineries in the Penedès that in the last few years has constantly received praise and significantly increased the number of sales. 20% of its annual production, 250,000 bottles, is now being sold in international markets.

Winery Canals y Munné

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
