Care Chardonnay Joven Blanco is a white wine from the appellation of origin (D.O) Cariñena produced by the winery Care, en Cariñena (Zaragoza).
The name of the winery plays with the old roman name of Cariñena "Care" that evolved from the meaning the "antigua llanura" (the old plains) this is also a play of words on the English word "to care" using in the same vein, the most traditional methods of production that were once used in the winery.
Combined with both meanings the winery Care adds also a great sense of self identity: the combination of tradition and innovation.
Care Chardonnay Joven Blanco is 100% produced from the varietal Chardonnay. The grapes originate from vineyards planted at an altitude of 600m with loamy soils and rare fertile lands.
For production of Care Chardonnay Joven Blanco the must is obtained through a bleeding process of 18 hours of cold maceration at 9ºC with the husks.
Subsequently, the alcoholic fermentation process takes place in cone-shaped vats of stainless steel at a regulated temperature of 15-18º C.
Additionally, all the wines from this winery carry the label with a drawing from the artist Enrique Torrijos, the label shows a silhouette of a face using primitive and syncretistic styles. This is therefore, a combination of the symbol between the old and the new.
For centuries red wine from Cariñena was characterized by high alcohol contents, intense colours and great strength. These wines were made for French and Spanish exporters, who used it for blending with other wines from other latitudes, which were much lighter, thinner and fragile. However in recent years, the area has been carefully working with the traditional Grenache grapes, as well as recovering back the Cariñena variety (also known as Mazuelo), shaking off overly alcoholic wines to join the world of good quality wines. The future of this region is much more promising than its past.
