Characteristics of Cair Cuvée

Cair Cuvée is a red wine from the D.O Ribera del Duero produced by the winery, Dominio de Cair. A project set up by Luis Cañas in this designation. The wine is a blend of Tempranillo (85%) and Merlot (15%).
The grapes that produce Cair Cuvée originate from very low yielding vines, aged between 20-25 years old, and planted at an altitude of 900m above sea level. The harvest is performed by hand, ensuring that maximum care is taken to not damage the grapes.
Once in the winery, a double selection of the grapes is completed: the best bunches and the best grapes. After, the grapes are destemmed.
The must for Cair Cuvée is fermented in stainless steel vats for a process of 15 days.
The wines is aged for 9 months in French (60%) and American (40%) oak barrels: 1st and 3rd year barrels. The wine is then subsequently bottled and rested for 6 months.

Tasting notes Cair Cuvée

Sight Cherry red with garnet notes. Bright and a fine tear. Nose Intense touches of black fruit. Spicy notes with milky and toasted undertones. Taste Powerful and fleshly attack, toasted notes with a fruity presence. A good acidity, enjoyable tannins
Sight Beautiful cherry colour with intense maroon edges. Very bright, medium-high robe wine with thin tears. Nose High intensity nasal aromas among which the powerful notes of black fruit at their optimal ripening stand out along with some intense milky notes. When it opens up, the aromas of spices and refined toasted notes are gradually released. Taste In the palate, this Spanish wine is fleshy and powerful. The initial notes of fruit give way to intense toasted and spicy aromas and are felt again at retro-olfaction. It has a good, sharp and refreshing acidity and a high tannic sensation. Long and persistent finish.

Sight Intense cherry red colour with violet edges. Clean and bright wine with a medium-high robe and thin tears. Nose Intense notes of ripe red fruit, almost jam, are released along with many spicy, rather sweet aromas, and lots of bakery, cream and milky touches. In the background, good and refine toasted aromas are always found along with a subtle smoked hint. Taste This wine is good and very nice at the attack. It has a very tasty, sweet mid palate with a silky texture and strong, powerful aromas. Some vanilla and cocoa notes which were bearly felt on the nose, are released along with the fruity and toasted aromas of this wine on its milky background. It shows a good acidity and sweet noticeble tannins. Its long finish leaves a toasted aftertaste.  A very nice and tasty wine.
