Agustí Torelló Mata Gran Reserva Brut Nature is a cava made by Cava Agustí Torelló Mata in Sant Sadurní d'Anoia, the cava capital.
Agustí Torelló Mata started in the world of very young cava and in 1953 they inaugurated in Sant Sadurní d'Anoia the first wine analysis laboratory. In 1959, they founded its own winery.
This cava is a coupage of Macabeo (38%),Xarel·lo (28%) and Parellada (34%) varieties grown on their own vines planted in diverse soils. The Macabeo grows on vines locates in Sitges in gravel and caliche soils between 0-200 metres above sea level. Xarel·lo is extracted from vineyards close to Montserrrat planted at an altitude of 200-400 metres above sea level in calcareous-clay soils. Finally, Parellada is grown on vineyards located 400-900 metres above sea level in Castillo de Mediona, in sandy and slate soils.
It is a cava Brut Nature, and therefore there is no addition of expedition liqueur.
Agustí Torelló Mata Gran Reserva Brut Nature rests for 36 months in the bottle. There is a long aging supported by complex cava and a fine integration of carbon.

Tasting notes Agustí Torelló Mata Gran Reserva Brut Nature

Sight Pale golden yellow colour with green reflections. Nose On the nose there are aromas supported by an aging with notes of butter and toasted bread with background of ripe fruit. Taste On the palate it is broad with well integrated carbon. A long and persistent finish.
Sight Pale yellow colour with greenish reflections. Thin bubbles which form a crown on the surface. Nose Initially, the aromas provided during the ageing appear along with milky notes and toasted bread. In the background, the aromas of ripe white fruit and stone fruit appear together with delicate floral hints. Taste It is a large cava, which also shows a fine carbonic acid gas, very well integrated. The notes of the ageing are melted together with the ripe fruit, the toasted nuances and dried fruits. The finish is long and persistent.
Sight A golden yellow colour. Clean. Fine and persistent bubbles, slow-rising. Nose An elegant aroma, with fine notes of ripe fruit, vanilla and smooth toasted notes with a balsamic, smoky background. Good complexity. Taste Fine attack on the palate, with very well-integrated fizziness. Good development on the palate. A creamy fizziness is felt and a background of vanilla, toast, cakes and fruit from its long ageing. A very long and complex aftertaste, in which the aromas from the nose and mouth are repeated.
Sight Straw yellow colour with greenish reflections. Thin and persistent bubbles that evolve slowly forming a consistent rosary and crown.
Nose Fine aromas of the ageing with lactic notes of fresh butter on a background of ripe fruit.
Taste Pleasant and fresh attack and a large mid-palate in which the carbonic acid gas is very integrated. The notes of the ageing are melted with ripe fruit, toasted nuances and dried fruits. The finish is large, long and persistent.

Winery Agustí Torelló Mata

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
